Welcome Back – It has been a nice summer – truly! Lots of fun was had and trips were made – we slept in almost every day and that kinda slow-paced living was with us all day… in a wonderful way of course. In one way I totally enjoyed the living into the day routine but come evening and dinner had to be prepared, I was often to tired and exhausted after the day ran its course.
My kids are 7 and 4 now and still have a very restricted pallet – talking – no thank you bites – at almost every dinner and lots of ‘I don’t like this’ without even trying.
They both love the Israeli (big) Couscous though because it has a pasta like consistency so I started to play around with that. One day I made it to accompany dinner but I had so much leftover and rather than tossing it I threw it in the fridge. Next day – staring in the big nearly empty fridge – I thought lets try to do a couscous salad. Mainly for my husband and I an generally I find it very pleasing to use leftovers.
I searched for a few recipes, picked this and that and came up with a concoction that even my kids ate – SURPRISE! I call it the:
MAGICAL Couscous salad

serves 8 – cook time: 10 min – prep time: 20 min
For the salad:
3 cups of leftover Israeli Couscous – cooked in broth
1 cup of cocktail tomatoes halved
1/2 cucumber diced
1 can of drained chickpeas
1 can of drained corn
2 ripe avocados cut in chunks
10 dates chopped
1/3 cup red onion diced
one handful of cut spinach
For the dressing:
1/2 cup of olive oil
2 cloves of garlic
juice of 2 lemons
2 tbsp of red wine vinegar
5 sprigs fresh coriander
pinch of ground cumin
pinch of ground ginger
Put all the ingredients in a magic bullet or some sort of blender and mix until creamy – add the dressing to the salad and there we go! Let the magic take you over! This salad lasts up to 2 days in the fridge and if you opt to add the dressing later and store the salad separately it will last you up to 4 or 5 days! Snack on!
Fantastic add on’s: Black olives, Feta, nuts, fresh dill, figs, pomegranate, apple, roasted chicken, lamb or sweet Italian sausage thinly sliced
